In Hungary and in other Central European countries, the household butchering of pigs for own consumption is a many centuries old tradition. The feast traditionally takes place outdoors in the cold winter months for the hygienic preparation of meat products by avoidance of fly infestation. The animals are stunned or shot in the head before exsanguinated, then their hair is burnt off with a scalder before the carcass is hung to be eviscerated and cut in half. The preservation of the pork cuts, lard, sausages and other meat products is done either by cold smoking or by rubbing salt on them.
